Mediterranean Banza Bowl

Alright, you guys, you need to make this ASAP! And this is not a false alarm. This bowl is super delicious, full of fresh flavors and different textures. Make it and your tastebuds will thank me.

I am an ambassador with Banza (what does that even mean? I don’t really know…but I’ll take the fancy title) and they sent me a bag of their new chickpea “rice”. I’m not gonna lie, I was a little skeptical. Come on now, why we gotta be messing with rice? There’s absolutely nothing wrong about eating rice (because there’s no morality attached to food) and rice provides nutrition that other grains don’t. Variety is the spice of life and the thing that ensures we get all the nutrients we need.

Anyways, so I was little irritated that they were trying to replace rice. But THEN I tried it. And loved it. It definitely doesn’t replace rice, but it’s another delicious food to add to my life. As I’ve mentioned before, I don’t eat many chickpeas/beans, so Banza products allow for me to have more food groups in my life more easily. So I would encourage eating rice AND this Banza rice, because both are delicious. I’d compare it to orzo pasta, and I’m a fan or orzo recipes.

The great thing about this recipe is that you can make all the components one day and then keep them in your fridge for several days of lunches or dinners. Woohoo for easily assembled meals!!

I’m going to do some more recipe testing with the rice and I’m super pumped about it…okay, I need to tone it down a bit. But I really did enjoy it.

In other news, Isaac had the flu this past week, so we’ve quarantined him and I’ve been solo parenting. Phew it’s hard work! Single moms, you are super heroes…Thankfully after several days of doing it alone and hanging out by myself in the evenings, my in-laws came to watch Cam for a few hours so I could workout out 🙌🏻 and get some coffee and work on this post. It’s the little self-care actions in life that make all the difference. 😉I’d love to hear what you guys think of Banza’s new rice, this recipe, and what you’ve been up to lately!! Quick summer time lunch

So because it's getting hot here (and because I'm pregnant), I'm craving lots of cold, fresh foods. Side note, I had Jason's Deli for lunch the other day with a friend for the first time in like 10 years, and the salad bar was SO refreshing!! I'm trying to remember what all I put in my salad so that I can recreate it, because it was super delicious. Do people even go to Jason's Deli anymore? I'm okay with the free ice cream that comes with every meal....🙋

Homemade Maple Oatmeal Bread

Hello readers! I recently posted an instagram story of a peanut butter and banana sandwich on homemade bread for a snack I was eating (because lately second breakfasts are a much needed thing) and I got several requests for the recipe for the bread. So per your request, I whipped up another batch to take some pictures (and let's be honest--so that I could have it for snacks/meals again this week) and am providing the recipe here!....You're welcome.

In high school, one of my best friend's mom made everything from scratch, including their bread. I mean, she would make their burger buns homemade. Talk about GOALS. And pretty much everyday my friend would pack a peanut butter sandwich on her mom's bread for lunch at school. One weekend I spent time with them and her mom brought me a pb sandwich and I was IN HEAVEN. The bread is dense and chewy and it goes perfectly with peanut butter and banana. And don't get me started on how great it is toasted. I don't know what it is, but it's got the perfect crunch.

I tried making the bread throughout high school, but could never get the dough to rise and I always ended up with a brick. Thankfully I no longer try to make recipes with dense whole wheat flour and sugar free pancake syrup  🙈 (it doesn't work, people). When I got married, my friend's mom was so sweet to give me a bread machine so that I could always make her bread for Isaac and I. Now, I don't actually use the bread machine for this recipe, but that's only because I don't know where the manual is for it and I have no clue which option to choose 😂

So the good news is that you can make this bread in your regular 'ol oven! And it's super fast because you don't have to wait hours for it to rise--instead you just need 20 minutes of rising time (see the recipe instructions below)!
