Turkey and Black Bean Enchiladas
Welp, it's been awhile since I last posted a recipe (story of this blog). Sorry about that. *guilty emoji face* But I'm going to make up for my recipe absence with enchiladas. Surely, that corrects all wrongs, right??
I don't know if you all have any Christmas food traditions, but I know several people whose families eat tamales at Christmas. Mexican fiesta? Yes, please, I'm down--especially if I can top everything with avocado. My family didn't do that growing up. Instead, our traditional favorites were things like tiger butter, ham dip, and white trash. Interesting names, delicious food.
So with Christmas right around the corner, I figured you could honor your family tradition or tap into someone else's family tradition and eat Mexican food to celebrate the Christmas season. These enchiladas are filled with protein, veggies, and cheese and wrapped in a doughy tortilla <3. I used store-bought enchilada sauce, but you could definitely make your own. Also, they ended up being a bit spicy, so if you're not a big fan of heat, used a mild enchilada sauce or go easy on the sauce. You'll definitely want to top with sour cream, avocado, and some green onion and cilantro. We didn't have any green onions, hence why they aren't in the picture.
I served mine with roasted Brussels sprouts and cauliflower because roasted veggies are my jam, but these would pair nicely with some Mexican rice or chips and salsa. I'd love to hear what you all have planned for Christmas and what your favorite Christmas food tradition is!! Comment below! :-D

An RD's advice on eating during the holidays
Hello everyone! Are you all as excited about the upcoming holidays as I am? I am suuuuper excited to spend time with my family, eat good food, play games, listen to Christmas music, decorate my tree, watch Christmas movies, and look at Christmas lights. It's gonna be SO great!! :-D
Now that I have normalized my relationship with food, the holidays are exciting rather than stress-inducing. I'm not worried about the foods I may or may not eat. What I choose to eat or don't choose to eat stems from honoring my body and emotional needs. However, I understand that I am in the minority on this issue. Everyone stresses about overeating during the holidays and how that eating is going to affect their waistline. So, I figured I would share with you two pieces I was featured in on this topic.

Favorite Oatmeal Recipes Roundup
Sooo...let's get real. I like oats. A LOT. One look at my instagram account and you'll discover that very quickly. I went scrolling through my account to get some inspiration about my favorite recipes and holy moly. It made me want to eat oatmeal for every meal for the next week!! Okay, maybe not every meal, but it reminded me of how dreamy oats are.
I love eating oats because they can be hot, cold, creamy, doughy, cakey, etc. The possibilities are endless!! It honors my cravings for sweets, fills my desire for doughy textures, and the fiber content keeps me full and my blood sugar stable for several hours. I wanted to share several of my favorite recipes with you so that you can mix up your breakfast routine or get into oatmeal if you're not already into it. I seriously had oats in some form for breakfast for like a year straight. I can help you out!
This is one of the first oatmeal recipes that got me into the world of oats--whipped banana oatmeal. I love topping it with chopped apples, flax seed, and walnuts. <3
Then after my whipped oatmeal phase, I got into various baked oatmeal recipes. Here are a few of my faves...The one below is from Immaeatthat. Kylie knows how to do a baked oatmeal :-D
For the chocolate brulee below, I just top it with peanut butter instead of stuffing it inside. LOVE the crunchy topping! I'm all about mixing crunchy with a doughy texture.
This one is even doughier than the brulee one. It's more like bread pudding (insert heart eye emoji here). Ooey gooey in the middle, crunchy on the top!!
Then I got into overnight oats. I make mine a variety of different ways. Cooled coffee gives it a nice flavor like in this recipe.
Other times I mash part of a banana, add oats, chia seeds, pb2, and milk into a bowl, stick in the fridge and then top with fruit, nuts, and peanut butter in the morning. Ohemgee...
And now with the weather FINALLY getting cooler, and my love for espresso continuing to grow, I canNOT wait to try out this recipe below for an oatmeal latte. It's genius!!
